Technically almond is the seed, not the fruit, of the almond. From the many varieties of almonds in our territory, the most known are: tuono, ferragnes and Tessitora almonds. Another difference is that of sweet and bitter almonds.
Sweet almonds contain unsaturated fats, proteins, mineral salts, and vitamins in particular vitamin and, in addition, they contain magnesium which is a real touch for the nervous system.

The pasta produced with Sicilian durum wheat semolina from organic farming only, made with craftsmanship and bronze wire drawing, in the original format of Trapani Busiate. The traditional recipe, realized 100% with organic row materials made in Italy, consists of a tomato cut in liquid juice with the original characteristics of fresh tomatoes enriched with Agliata BIO, for the preparation of Trapani-style pesto, with almonds well appreciated for its special fragrance and flavor intensity, extra virgin olive oil, and garlic grown in the province of Trapani, Nubia, internationally famous for its red color and strong spicy and intense flavor.

The story of Nubia tells that "agghia pistata", the basic ingredient of Pesto alla Trapanese, made with fresh and raw ingredients, comes from the inhabitants of Genoa who, returning from the Far East with their ships, docked at the port of Trapani. The people of Trapani added what Sicily offered (almonds, tomatoes, basil and extra virgin olive oil) to season the Busiate (the pasta shape that best matches Trapani pesto), whose flavors and colors are as strong as they are powerful and colorful the Sicily and its people. It is a dish strongly linked to the territory and its population, a symbol of an identity that, like a flag, flies over the history of this ancient territory, considered one of the most beautiful in the world with mills, salt pans, beams, towers, ports, a mix of cultures, religions, knowledge, and flavors, which have always coexisted. A dish that is a combination of territory, food, knowledge of places, sea, salt, cultural identity, and for this reason it should be loved, respected, made known, and bequeathed to future generations.
