Open the paper packaging and in just 6 minutes you can enjoy 100% organic pasta - the finely curved Bandnudeln enhance every dish as a side dish and are the ideal filler. They are carefully made from Austrian organic durum wheat semolina, organic eggs from Austrian free-range farming and fresh water from the Karwendel nature reserve.

All Recheis organic products are subject to strict controls and are certified organic. This certificate gives security for the highest, tested quality. The organic certificate is awarded by Agrarmarkt Austria Marketing GesmbH (short: AMA).

Cooking instructions for ORGANIC Bandnudeln / Ribbo Pasta

• We recommend using a large saucepan so that the ORGANIC Bandnudeln has enough space in the pot.
• Bring 1 litre of water to the boil for every 100 g of pasta.
• Add salt to the boiling water and add the pasta.
• Stir the Bandnudeln more often.
• After about 6 minutes, the pasta is “al dente”
• To prevent the Bandnudeln from sticking together, mix the Bandnudeln quickly with the sauce.

White wine
“Coup de Foudre” is the first wine harvested at the Domaine, usually within the first week of September. The resulting wine is a blend of three Mediterranean white grape varieties; Grenache Blanc, Roussanne and Vermentino. The grapes are grown on two distinct soil types; the first plot is situated near the entrance to the Domaine on clay limestone and the second on schist at an altitude of 400m.

THE VINIFICATION PROCESS

Immediately after harvest the grapes are stored in the cold room at 6 ºC for a minimum of 12 hours before being cold pressed. Whole bunch pressing then follows without any maceration at low temperatures of 4ºC. There is then a gentle clarification before transferring to 20-year-old Alsatian casks. The fermentation then starts when the temperature is raised to 18ºC. The vinification then proceeds without any chemical, or oenological, intervention. The wines are allowed to follow nature’s course. Aged on the lees, the wine then evolves naturally with malo-lactic fermentation taking place, or not, as nature dictates. When bottled in Spring, Coup de Foudre undergoes a light filtration with a minimum addition of sulphites to guarantee clarity and optimum stability.

Quality: Extra virgin. Olive oil obtained directly from olives and produced by mechanical procedures.

Tasting Notes: Intense oil with elegant and strong smell, with notes of green grass, thyme, rosemary and green almond. It shows a firm entrance, therefore a huge balance between bitter and spicy.

Balsamic vinegar of Modena IGP is a typical sweet-and-sour condiment, specifica of Emilia Romagna Region and holding the Protected Geographic Indication European LOGO (IGP/PGI). Balsamic Vinegar of Modena is obtained from the fermentation, acidifying and aging of Grape juice (Must). The aging should take place in wood barrels for at leat 60 days to obtain the IGP/PGI certification and acidity should be minimum 6%. It is possible to add Caramel as a colouring agent but all the REALE products are Colouring-free. In fact, we use natural aging in wood barrels and do not use any additive or preservative. We offer also aged and creamy Balsamic vinegars because when Balsamic is aged it becomes creamy and thick. Therefore, a young balsamic is used to dress salads while an older balsamic can be used on fruit and desserts as well.

Organic wheat flour, slowly ground with natural monolithic Sardinian granite stone, grown only in our fields Marche Quality. It’s possible to choose between Whole Wheat, Type 2 or Type 1 in relation to the desired particle size. It’s also possible to choose bags of different weight between 1, 5 or 25 kg.

Black Label is our tastiest cheese. It is a soft-paste organic goat cheese with an edible, bloomy rind.
We produce it daily with our goats’ pasteurised milk and specially selected lactic cultures.
Its outside is pure white; in the inside, its texture is rich and chalky. It delivers a long aftertaste that is only slightly goaty, making it our bestseller.
Black Label is also an elegant cheese: it is wrapped in white paper and packed in a beautifully engraved wooden box, which makes it almost a luxury item.
